You can scan your Amiibos to get a multitude of rewards in The Legend of Zelda: Tears of the Kingdom.
Some of these rewards are exclusive to them too, such as the Paraglider Fabrics. Of course, these are purely cosmetic so you’re not missing out too much if you don’t have them.

How Amiibos work in The Legend of Zelda: Tears of the Kingdom
You will need to scan your Amiibos by placing them on the NFC touchpoint. This is the right stick on Joycons and Switch Lite, and the Nintendo Switch logo on Pro Controllers.
Once you’ve scanned it, you can select the “amiibo” ability from the ability wheel by holding the L button. Press L with the ability selected and aim at where you want to spawn your rewards, then press L again.
You can scan each Amiibo only once per day.The rewards are also randomized each day, so you will need to keep trying daily to get all potential rewards!
Additionally, Amiibos from properties other than The Legend of Zelda will only provide basic generic rewards, such as random weapons and materials. Only The Legend of Zelda Amiibos will provide unique rewards!
Lastly, most Amiibo will spawn a bunch of random resources and a chest. The resources and chest contents are all randomized, but they are always of the same type. For example, Revali’s resources are always fruits.
Only the Zelda-related Smash amiibo will provide unique rewards, as mentioned in the introduction. Nonetheless, these are the ones that will provide unique rewards:
Link (Smash Bros) – Epona, swords, and random fruits.
Ganondorf – Gems, Demon King Paraglider Fabric, and random meats.
Sheik – Sheikah weapons, Sheikah gear such as Sheik’s Mask, Sheik Paraglider Fabric, and random mushrooms.
Toon Link (Smash Bros) – Ranged weapons and random fish.
Young Link – Swords, Lon Lon Ranch Paraglider Fabric, and random food items.
Zelda (Smash Bros) – Ores, Princess of Twilight Paraglider Fabric, and random plants.
